Kitchen counter backsplash question...?

i am having granite transformation do my counter top...my question is if i decide not to use the existing 4" backsplash can i put the counter top right up to the drywall and please give me some alternate ideas instead of using tile...the transformation people said i should do the granite up under the cabinet but i'm using a black/tan mix and i think it will be too much...thanks for your help.
